Ingredients
- 2 tbsp butter
- 1 brown onion
- 200g oyster mushrooms
- 1 tsp Chinese five spice
- 80g hoisin sauce
- 4 brioche buns
- 50g cos lettuce, chopped
- 100g coleslaw mix
Method
- On a medium-high heat, melt butter in a medium/large frying pan. Add in onion and brown for 2-3 mins, turning continuously. Add in mushrooms and cook until browned.
- Sprinkle Chinese five spice over mushrooms and onions and toss well for a further 2-3 mins.
- Add hoisin sauce and lower to a low heat for 5-10 mins, stirring occasionally.
- Top burger buns with chopped lettuce, coleslaw, mushrooms and hoisin sauce.
- Tip: Try a mix of mushrooms like enoki, lion’s mane or shiitake for different flavours and textures.
