Healthy, tasty, high protein omelet!
Protein allows the muscles to rebuild and repair. Whether your goal is fat loss, muscle gain, to become fitter, stronger, leaner, or a combination of these; it is essential that you refuel your body after exercise.
It is suggested that the ideal “window” of time in which to consume our post-workout meal (in order to aid recovery) is up to 90 minutes after training. The sooner, the better! This recipe is for the perfect post-workout meal, that takes only 5 minutes to prepare!
Ingredients:
1 x whole egg
4 x egg whites
1 x cup microwaveable “quick cup” brown rice (Sunrice)
1/2 x cup chopped veggies of your choice (i used mushrooms and onions, but capsicum, tomato, baby spinach and zucchini also work well).
Salt and pepper to taste.
Method:
– Cook the rice in the microwave as per the instructions (should take 40 seconds).
– Heat a small non-stick frypan over a moderate heat.
– Finely slice the veggies, lightly beat the egg and egg whites in a large bowl and add the sliced vegetables. Add the cooked rice to the mixture.
– Pour the mixture into the frypan. Once the mixture is solid, flip it over on cook through.
– Season with salt and pepper to taste, and enjoy!
