Ingredients
- 2 leeks, thinly cut
- 2 medium potatoes, chopped
- 4 cups vegetable stock
- 2 cups frozen peas
- 1 small bunch broccoli
- 1/3 cup coconut milk
- Juice ½ lemon
- Pinch chilli flakes
- Handful baby spinach
- Greek yoghurt & pumpkin seeds to serve
Method
- Bring leeks, potato, stock and broccoli to the boil, then allow to simmer for 20 mins
- Add peas and baby spinach and simmer for 5 mins.
- Blend the mixture until well combined.
- Divide into four soup bowls and then top with a spoonful of Greek yoghurt and roughly chopped pumpkin seeds.
