Ingredients
- 1 tbsp paprika
- 100g fetta, crumbled
- 1 tbsp dried oregano
- Handful baby spinach leaves
- 2 tsp cumin
- 2 tsp coriander
- 2 tsp garlic granules
- 1kg chicken thigh fillets
- Olive oil spray
- 2 red onions, cut into eighths
- 1 red capsicum, cut into 2cm pieces
- 1 yellow capsicum, cut into 2cm pieces
- 1 cup Sicilian green olives
- Salt & pepper, to taste
Method
- Combine the herbs and spices in a bowl, add the chicken and toss to coat well.
- Spray a large shallow baking dish with oil, then add the chicken to the pan with the onions, capsicums and olives. Spray again with oil.
- Bake the chicken at 180°C for 15 mins, then add the gnocchi pieces to the pan. Spray the gnocchi with oil and bake a further 30 mins. Season to taste.
- Sprinkle over the fetta and spinach. Serve immediately.
