Ingredients
- 3 large organic oranges
- 4 organic eggs
- ½ cup honey or maple syrup
- 3 cups almond meal
- 2 tsp baking powder
- 1½ tsp vanilla bean extract
- 250g organic white chocolate
- Dried orange pieces to decorate
Method
- Preheat oven to 170°C. Grease and line a 12-hole cupcake tin.
- Place whole oranges in a large saucepan covered with water. Bring to the boil and reduce to a simmer for 40 mins. Drain oranges when done and allow them to cool.
- Place oranges, eggs, honey, almond meal, baking powder and vanilla extract in your food processor and blend until smooth and well combined.
- Pour mixture into cupcake holes and bake for 40 mins or until cooked through. Allow your cakes to cool completely before adding the topping. You should have batter left to make some more cakes.
- To melt your chocolate, bring a small saucepan with around 2in of water to boil, then reduce to a simmer. Place a heatproof bowl over the top of the pan so it fits well and doesn’t touch the water. Add your chocolate and stir until melted.
- Turn cakes over and top each cake with melted chocolate so it runs down the sides. If your cakes are uneven, trim the bottoms so they sit flat.
