Beetroot Collagen Hummus

This beetroot collagen dip is the perfect way to incorporate beautifying snacks into your day. Rich in folate, beets stimulate the production and repair of skin cells, which helps protect against cellular ageing. They are also rich in Vitamin C to support collagen production and fight against pigmentation. When combined with Edible Beauty’s Native Plant-Based Collagen Powder and walnuts, the result is a pretty pink dip sensation that is supercharged with Vitamin C, omegas and antioxidants, not to mention an abundance of delicious flavour!

Detox Bliss Brownies

The name “Detox Bliss” Brownies appears to be an oxymoron as we do not commonly associate detox with bliss! However, some of the star detox foods including turmeric, beetroot and avocado are wonderful for promoting a healthy liver. A good game to play with these brownies is “guess the ingredients” as you would never know that there are some super detoxifiers, along with Edible Beauty’s Gut Replenish Powder lurking within!

Ingredients

  • ½ cup walnuts, roasted
  • 3 large beetroots, cubed then roasted or boiled
  • 1 tbsp Native Plant-Based Collagen Powder
  • ⅓ cup coconut yoghurt
  • 2 tbsp tahini (more if you want a thicker dip)
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • Juice ½ lemon
  • Himalayan salt & pepper, to taste
  • Handful fresh coriander leaves, to garnish

Method


  • Preheat the oven to 190ºC. Put the walnuts on a baking tray and toast in the oven for 5—7 mins, until fragrant. Set aside to cool.
  • Once cool, place the walnuts into a food processor or blender and process until roughly chopped. Add the beetroot, Native Plant-Based Collagen Powder, coconut yoghurt, tahini, olive oil, cumin, lemon juice, a pinch of salt and a good grind of pepper, then blend to a thick paste.
  • Transfer the dip to a serving dish, garnish with fresh coriander leaves and serve.
  • Tip: This hummus is delicious enjoyed with vegetable cruditès and crackers!
