Ingredients
- 2 cups fresh spinach
- ½ tbsp extra-virgin olive oil
- 1 bunch cherry tomatoes
- 100g Sunny Queen Farms The Odd
- Eggs Ready-to-Pour Egg Mix
- Salt & pepper, for seasoning
- ¼ cup crumbled feta
- ½ tbsp lemon juice
- Fresh herbs, for seasoning
- ½ tbsp extra-virgin olive oil
Method
- Steam spinach in pan with water until wilted and place in a bowl.
- Add extra-virgin olive oil to a frying pan with and steam a bunch of cherry tomatoes until softened. Place aside.
- Pour the egg mix into a flat non-stick frying pan and cook over medium heat until top is almost cooked. Season to your liking.
- Add spinach and crumbled feta on top of the omelette, slide onto a serving plate and fold. Serve with a drizzle of lemon juice, herbs and tomatoes.
