Leftover Christmas Turkey Tacos Recipe

Tacos are a really quick and easy way to enjoy leftover turkey. This recipe is so light and delicious it’s the perfect meal in the days following a Christmas feast.

Ingredients

  • 1 cup tomato passata
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • 1½ tsp sea salt
  • ½ tsp oregano
  • 3 cups leftover turkey (shredded or finely diced)
  • 1 corn cob
  • 1 avocado, diced
  • 1 small lettuce, shredded
  • ½ bunch coriander leaves
  • 1 lime, quartered
  • 12 gluten-free corn tortillas

Method


  • In a medium-sized pot, combine the passata, paprika, cumin, 1 tsp sea salt and oregano and heat to a slow simmer for 5 mins.
  • Add the turkey and heat through.
  • Steam or grill the corn to cook, cut the kernels from the cob and toss through the remaining sea salt.
  • Heat the tortilla and serve with the sauce, corn, avocado, lettuce, coriander and lime.
  • Enjoy immediately.
  • Tip: This recipe also works well with leftover roast chicken.
