Tacos are a really quick and easy way to enjoy leftover turkey. This recipe is so light and delicious it’s the perfect meal in the days following a Christmas feast.

Ingredients
- 1 cup tomato passata
- 1 tsp smoked paprika
- ½ tsp ground cumin
- 1½ tsp sea salt
- ½ tsp oregano
- 3 cups leftover turkey (shredded or finely diced)
- 1 corn cob
- 1 avocado, diced
- 1 small lettuce, shredded
- ½ bunch coriander leaves
- 1 lime, quartered
- 12 gluten-free corn tortillas
Method
- In a medium-sized pot, combine the passata, paprika, cumin, 1 tsp sea salt and oregano and heat to a slow simmer for 5 mins.
- Add the turkey and heat through.
- Steam or grill the corn to cook, cut the kernels from the cob and toss through the remaining sea salt.
- Heat the tortilla and serve with the sauce, corn, avocado, lettuce, coriander and lime.
- Enjoy immediately.
- Tip: This recipe also works well with leftover roast chicken.
