Chocolate Berry Chia Pudding with Cashew Cream

This chocolate berry chia pudding is a star performer in our household. If you want chocolate for breakfast, lunch or dinner make a batch of this and eat to your heart’s content!

Ingredients

  • 2 tbsp cocoa or cacao powder
  • 2 tbsp agave or maple syrup
  • ⅔ cup chia seeds
  • 2 cups soy milk
  • 1 tsp vanilla essence
  • 2 cups fresh or frozen mixed berries

  • Cashew cream
  • 1 cup raw cashews, soaked in water overnight, water discarded
  • ¼ cup agave or maple syrup
  • 1 cup water

Method


  • Place cocoa, agave, chia seeds, soy milk and vanilla essence in bowl and whisk until cocoa powder has dissolved. Cover with lid and place in fridge overnight to set.
  • Place soaked cashews in blender with agave and water. Puree to cream, adding more water if necessary.
  • To serve, place enough chocolate chia pudding in glass to fill halfway. Add mixed berries, then a few scoops of cashew cream.
  • Repeat, top with berries and serve.
