Use cauliflower to create a light, fluffy mash without the gut-wrenching irritable bowel symptoms that may accompany potato. Flavour up this mild- mannered mash with nutritional yeast for a cheesy taste and a burst of B vitamins.

Ingredients
- 3 cups cauliflower florets
- 1 tbsp nutritional yeast flakes
- 1 tbsp almond butter
- 1 tsp Celtic sea salt
- ½ tsp freshly cracked black pepper
- Pinch nutmeg
- 1 tbsp almond milk
- Flat-leaf parsley, to serve
Method
- Put cauliflower florets in steamer over saucepan of boiling water and steam for 8–10 mins or until soft. Remove from heat and allow to cool slightly then purée in food processor with all remaining ingredients except almond milk until smooth. If mixture is too thick, add almond milk or a little water.
- Serve warm, garnished with parsley.
