Crumbed Prawns with Lemon-Lime Flax Sauce

Ingredients
- Sauce:
- 3 tbsp natural Greek yoghurt
- 1 tsp lemon juice
- 2 tsp lime juice
- 2 mint leaves
- 1 tsp paprika
- 1 tbsp Stoney Creek Organic Brown Flaxseed Oil
- Crumbed Prawns:
- 3 ziplock bags
- 1 cup Stoney Creek Flaxseed Flour
- 2 eggs
- 1 cup breadcrumbs
- 16 raw banana prawn tails
- To Serve:
- Rice
- Vegetables of choice
Method
- To make the sauce, mix all sauce ingredients and set aside in fridge.
- To crumb the prawns place flour, eggs and crumbs in separate ziplock bags.
- Place prawns in the ziplock bag of flour and shake, repeat with eggs and then breadcrumbs.
- While prawns are sitting in the breadcrumbs warm up some oil in a frying pan. Once oil is warm enough place prawns in the oil and cook until golden to golden brown.
- Serve with rice and vegetables topped with sauce.
