These little blueberry parcels are quick and easy to whip up. You can also shallow-fry them in good oil for a different texture.

Ingredients
- 1 punnet blueberries
- ¼ cup mascarpone
- 1 tsp almond meal
- 1 tbsp honey
- 16 wonton wrappers
- 1 egg, lightly beaten
- 1 tsp coconut sugar (optional)
Method
- Preheat oven to 200°C and line oven tray with baking paper.
- Combine blueberries, mascarpone, almond meal and honey in bowl.
- Lay wonton wrappers flat and lightly brush outer edges with egg.
- Spoon around 8 berries onto each wrapper and bring corners together to form a triangle. Press edges to seal and place on baking tray.
- Brush tops lightly with egg and sprinkle with a little coconut sugar (if desired).
- Bake for 10 mins or until golden.
- Serve with dark chocolate ganache and more fresh berries or chocolate.
- Tip: These are also delicious in puff pastry!
