Hummus is such a great food and so easy to make. This Healthy Vegan Beetroot and Flaxseed Hummus Recipe is both colourful and delicious.

Ingredients
- 2 garlic cloves, peeled
- ¼ cup tahini
- ½ cup lemon juice
- 1 tbsp salt
- 2 cups water
- 3 cups cooked chickpeas
- ½ cup flax meal
- 1 cup grated beetroot

- Sunflower sprouts, pistachios & cashew sour cream (recipe below)

- Cashew Sour Cream
- 1 cup cashew nuts, soaked for 15 mins in just-boiled water, then drained
- 1 cup water
- Juice 1 lemon
- 1 tsp salt
Method
- To make hummus, add all ingredients except water to food processor. Puree and slowly add the 2 cups water. Process until smooth.
- Blend all Cashew Sour Cream ingredients in high-speed blender until smooth. Use Cashew Sour Cream as topping along with sunflower sprouts and pistachios.
- Serve immediately.
