It takes a little time to prepare the beetroot and apple for this salad, but if you’re after a quicker option, you can easily grate the beetroot and apple. It will still work just as well and taste just as delicious.

Ingredients
- 2 large Granny Smith apples, peeled, cored & sliced into matchsticks
- 2 large beetroots, peeled & sliced into matchsticks
- ¼ red onion, thinly sliced
- 3 tbsp white-wine vinegar
- 2 tbsp extra-virgin olive oil
- Pinch pepper
- 100g feta cheese, crumbled
- Fresh mint & basil leaves, for topping
Method
- Add sliced apple and beetroot to bowl, along with red onion, white wine vinegar, olive oil, pepper and feta. Mix together well until combined and serve on large flat platter.
- Top with an extra drizzle of olive oil, feta and some fresh mint and basil leaves.
