Banana & Muesli Protein Bread

Ingredients

  • 2 large bananas (1 cup + 1/3 cup mashed)
  • 2 tbsp coconut oil
  • 3 tbsp sweetener of choice
  • 1 tbsp vanilla extract
  • 1 tsp apple-cider vinegar
  • 2 flax eggs (2 tbsp flax meal + 6 tbsp water, combined)
  • 1 tbsp coconut cream
  • 1 cup chickpea, buckwheat, oat or almond flour
  • ½ cup protein powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • ¾ cup Brookfarm Natural Muesli Macadamia Cranberry

Method


  • Preheat oven to 175°C and grease and line a loaf tin. Combine the dry ingredients (except the muesli) in one bowl and the wet ingredients in another bowl.
  • Stir the wet ingredients into the dry, then fold in muesli and mix until just combined.
  • Pour the batter into the loaf tin and top with a little extra muesli.
  • Bake for 40 mins or until a toothpick comes out clean.
  • Allow to cool in the tin for 5 mins before taking it out to cool completely, then serve.
