Ingredients
- 30-Second Hollandaise
- 120g butter, melted
- 3 egg yolks
- 1 tbsp lemon juice
- Salt & pepper, to taste
- 8 rashers bacon
- 4 eggs
- 4 bagels
- 2 cups baby rocket or spinach leaves
Method
- Take a large-mouthed mason jar, or any jar that your hand blender will comfortably fit inside.
- Place the butter, egg yolks and lemon juice into the jar and combine with hand blender, using the blender carefully. Taste and season with salt and pepper if desired.
- Cook the bacon to the desired level of crispness then remove from the pan and keep warm
- Fry the eggs in the hot bacon grease until the yolk is just set
- While the eggs cook, split and toast the bagels
- Place the rocket or spinach on the bagel and top with bacon and the fried egg
- Drizzle with hollandaise to serve
- Note; Left over hollandaise can be kept in the jar, with a lid, in the fridge for up to 5 days.
