Açaí Smoothie Bowl with Cookie Crumb Granola

Ingredients

  • Cookie Crumb Granola
  • 85g almonds
  • 60g pepitas
  • 30g shredded coconut
  • 8 Leda Golden Crunch Cookies
  • Smoothie
  • 1 banana, sliced & frozen
  • 200g frozen mixed berries
  • 200g frozen açaí purée, slightly thawed
  • ½ cup coconut yoghurt
  • ½ cup apple juice
  • Fresh berries, sliced banana and chia seeds, to top

Method


  • Preheat oven to 180ºC.
  • Spread the almonds, pepitas and shredded coconut in a single layer on a baking tray and toast for 5–10 mins, or until slightly browned.
  • Allow to cool then transfer to a food processor.
  • Add the Golden Crunch Cookies and pulse to form a coarse crumb. Transfer to an airtight jar or container to store.
  • Place the frozen banana, frozen mixed berries, açaí purée, coconut yoghurt and half the apple juice into a blender or food processor. Blend until smooth, adding the remaining apple juice as required.
  • Divide the smoothie mixture into two bowls, top with cookie crumb granola and garnish with fresh toppings to serve.
