Ingredients
- Cookie Crumb Granola
- 85g almonds
- 60g pepitas
- 30g shredded coconut
- 8 Leda Golden Crunch Cookies
- Smoothie
- 1 banana, sliced & frozen
- 200g frozen mixed berries
- 200g frozen açaí purée, slightly thawed
- ½ cup coconut yoghurt
- ½ cup apple juice
- Fresh berries, sliced banana and chia seeds, to top
Method
- Preheat oven to 180ºC.
- Spread the almonds, pepitas and shredded coconut in a single layer on a baking tray and toast for 5–10 mins, or until slightly browned.
- Allow to cool then transfer to a food processor.
- Add the Golden Crunch Cookies and pulse to form a coarse crumb. Transfer to an airtight jar or container to store.
- Place the frozen banana, frozen mixed berries, açaí purée, coconut yoghurt and half the apple juice into a blender or food processor. Blend until smooth, adding the remaining apple juice as required.
- Divide the smoothie mixture into two bowls, top with cookie crumb granola and garnish with fresh toppings to serve.
