Ingredients
- 1 cup black rice
- Large handful fresh Thai basil leaves, chopped
- ΒΌ sesame seeds
- 1 thumb fresh ginger, grated
- 1 thumb fresh turmeric, grated
- 1 red chilli, seeds removed, finely diced
- Juice 1 lime
- 2 tbsp tamari sauce
- 1 tbsp palm sugar (optional)
- 3 spring onions, finely sliced
Method
- Bring 2 cups of water to the boil in a large saucepan, add the black rice and simmer, covered, for 35 mins. Remove from the heat and stand, covered, for 5 mins.
- Add the black rice to a bowl along with the Thai basil, sesame seeds, ginger, turmeric, chilli, lime juice, tamari sauce, palm sugar and spring onions. Mix together until well combined and serve.
- Top with some extra chilli, ginger and spring onions.
