Ingredients
- 1 tbsp oil
- 2 tsp minced garlic
- 2 tsp minced ginger
- 500g pork, chicken or turkey mince
- 1 tbsp kecap manis (sweet soy sauce)
- 2 tsp soy sauce
- 1 tsp sesame oil
- 100g vermicelli noodles
- 1 cup bean sprouts
- 1 carrot, grated
- ΒΌ cup fresh coriander leaves, chopped
- 2 green spring onions, thinly sliced
- Cos lettuce leaves, to serve
Method
- Heat the oil in a pan and cook the garlic and ginger quickly for 1-2 mins.
- Add the mince and cook until browned.
- Add the kecap manis, soy sauce and sesame oil and cook on medium-high heat for about 5 mins until it is deep brown and caramelised.
- Prepare the vermicelli noodles according to packet instructions.
- Add the bean sprouts, grated carrot, coriander and spring onions and cook for 1 more min until just cooked tender.
- Toss through the noodles and serve in lettuce cups.
- Note: This is also delicious served in a wrap.
