Thai Almond Satay Tofu Skewers

Ingredients

  • 500g block organic extra-firm tofu
  • 2 tsp red Thai curry paste
  • 1/3 cup coconut milk
  • 2 heaped tbsp almond butter
  • 2 tsp coconut nectar
  • 1 tsp tamari or coconut aminos
  • Juice ½ lime
  • Handful almonds, roughly chopped
  • Lime, cut into wedges
  • 6 wooden skewers, soaked in water for 20 mins

Method


  • Cut tofu through the middle and press it between paper towels to remove any excess liquid. Cut tofu into 6 long strips and then thread them onto the skewers
  • In a small saucepan over medium heat, add all sauce ingredients and stir until well combined and creamy. If you want your sauce thinner, add more coconut milk.
  • Brush each tofu skewer with satay sauce. Cook your skewers a few mins each side on a griller or barbecue until golden brown.
  • Serve with extra satay sauce and lime wedges and top with chopped almonds.
