Ingredients
- 3 cloves garlic
- 250g broccoli
- 50g parmesan, finely grated
- 1 free-range or organic egg
- 40g wholemeal spelt flour
- Sea salt & freshly ground black pepper, to taste
- 4 tbsp olive oil
Method
- In a food processor, add the garlic while the blade is running.
- Add the broccoli and parmesan and process until it is well minced.
- Scrape the sides of the processor and add the egg, blend for 5 seconds to mix.
- Add the flour and seasoning and mix to combine, scraping the sides if necessary.
- Heat the olive oil in a pan and form a patty with damp hands, about the size of a golf ball, flattened.
- Cook over a low to moderate heat until crisp on both sides.
