Ingredients
- 1 tsp olive oil
- 500g beef or lamb mince
- 1 punnet cherry tomatoes, halved or quartered
- 1 capsicum, thinly sliced
- Handful fresh parsley
- 1 tsp dried oregano
- ½ tsp garlic salt
- 1 tsp paprika
- ½ tsp pepper
- 2 cups spinach leaves
- 8-10 wraps
Method
- Heat oil in a pan over medium-high heat. Add in mince and stir until cooked through and browned.
- Add in cherry tomatoes, capsicum, herbs, seasoning, then stir and cook for another 2-3 mins.
- Add in spinach leaves and cook through for another 2-3 mins. Remove from heat.
- Layer mince on wraps and top with crumbled feta.
- Serve immediately.
- Instead of wraps, the kids may enjoy this recipe on toast.
