Ingredients
- Box Explore Cuisine Fava Bean Fusilli
- 60mL olive oil
- 2 garlic cloves, thinly sliced
- ½ tsp hot pepper flakes
- 200g cherry tomatoes
- 20g fresh basil leaves, plus more for garnish
- 60g baby arugula
- Kosher salt & freshly ground black pepper, to taste
Method
- Bring a large pasta pot filled with water to a boil. Season with salt, and cook Explore Cuisine’s Fava Bean Fusilli according to package directions.
- Add olive oil to a high-sided sauté pan over medium heat.
- Add sliced garlic and cook for 30 secs, then add hot pepper flakes, cherry tomatoes and basil. Cover and let cook for 10 mins until tomatoes begin to burst.
- Turn heat to low, remove the lid, and season with salt and pepper.
- Once the pasta has been cooked, drain (reserve 1 cup of pasta water) and add the pasta directly to cherry tomato sauce. Toss pasta until evenly coated.
- Turn off heat, toss in arugula until it begins to wilt. Adjust the consistency of the sauce with reserved pasta water if needed.
- Divide between bowls. Serve garnished with more basil.
